Hoa Hau commune in the northern province of Ha Nam’s Ly Nhan district is now not only famous for Nhan Hau persimmons and Dai Hoang king bananas but also for its pot-cooked carp.

“To have a good pot of cooked carp, we have to cook black carp weighing no less than 3 kg for 10-14 hours in earthenware pots exclusively made in Thanh Hoa and Nghe An provinces,” revealed Tran Huy Thoa, the largest pot-cooked carp producer in the commune.

According to him, to create the special taste of their products, the locals add carp sauce and traditional spices such as ginger, galingale, chilly and lemon juice to the pot.

The authentic dish is now present in many cities and provinces nationwide and has been exported to several countries including Germany , Russia , Italia and the US . The commune exported over 12,000 pots during the last lunar New Year festival, earning more than 3 billion VND.

This lunar new year, Thoa’s family alone exported 2,000 pots, he said.

Hoa Hau will reportedly export the product to China in the coming time./.
