The definition of the noun “pho” was officially published for the first time in the Vietnamese dictionary in 1930, initiated by the Khai Tri Khai Duc Association. The main ingredients of traditional pho are pho noodles and a rich broth made from bones.

The most commonly used bone type is beef bone while some people use pig bones instead. This broth is flavored with a variety of spices including cinnamon, anise, grilled ginger, cardamom, cloves, coriander seeds, and dry onions.

The meat used for traditional pho is beef, mainly the shank, short rib and brisket. The meat will be prepared as either rare or well-done depending on the eaters’ preference. People can also use either chopped or shredded chicken for this dish.
